Annie Martin's Yam Pudding

Annie Martin was my grandmother (Mama's mother).  She was a remarkable seamstress, musician, mother, and cook!

2 & 1/2 cups milk
3 medium yams (raw)
3 eggs
2 tsp cinnamon
1/2 c. pecans, chopped
1/2 stick of butter
2 cups sugar (I reduce this amount to about 1 & 1/4 cups)
  1. Grate the raw yams into a 2-quart casserole, adding milk as you grate to prevent potatoes from turning dark. 
  2. Beat eggs well and add sugar gradually; add cinnamon and nuts. 
  3. Pour into yam mixture; stir well. 
  4. Dot generously with butter and bake at 300 degrees for 2 hours.
Servings: 6
