French Fries

Mama made the best French fries ever!  You need 2 paper grocery sacks or improvise.

When my mother would make these, half of them would disappear before they ever made it onto the dinner table.  Sneaky kids! 
Makes 6 servings. 

 potatoes, peeled
self-rising flour
cooking oil
salt and pepper
heavy pot for frying
2 large paper bags  (optional)
  1. Peel and wash potatoes and cut for frying.  Cut in larger pieces than those from fast-food places.
  2. Dredge potato pieces thickly in flour, salt, and pepper mixture; set aside and let wilt slightly.  You can put the flour, salt, and pepper all in a bag, dump the potatoes in, and shake!
  3. Deep fry in very hot oil until golden brown.  Do not overcook.
  4. Have a large PAPER bag handy.  Dump cooked potatoes in the bag for a few minutes to absorb extra oil.
  5. Eat while hot!
Backstory:  When my brothers, Charles and Jackie, were teenagers, I can remember trying my best to get my hand in the bag to get a "sample" of fries before they were all gone.  We ate so many of those "samples" that Mom would be afraid of not cooking enough for the meal!
Backstory #2:  The story goes...my brother, Jackie, once asked his wife, Jane, "Why can't you make French fries like Mom's?"  Well she learned how and has perfected them so much that they're ALMOST as good!
