Mai Tai
"Mai Tai" means "out of this world good" in Tahitian.  Legend has it that the first person to taste the cocktail yelled out, "Mai tai!" Delicious Mai Tais have been famous in one way or another since either Donn Beach at his Beachcomber Bar or Victor Bergeron at his Trader Vic Bar invented the cocktails in the 1930s - 1940s.  Have fun with a Mai Tai cocktail and garnish with all sorts of fruit.

Serves 1.
Ingredients
ice
1 &1/2 ounces white rum
3/4 ounce orange curaçao
3/4 ounce lime juice, freshly squeezed
1/2 ounce orgeat almond syrup or 1/2 teaspoon of almond extract 
1/2 ounce dark rum
Fruits of choice for garnish
Steps
  1. Put a handful of ice into a cocktail shaker or a jar with a lid.
  2. Pour in the white rum, curaçao, lime juice, and almond flavoring and shake for just a few seconds.
  3. Pour into a cocktail glass.  Carefully pour the dark rum on top.
  4. Garnish with any fruits you like:  citrus slices, mint, pineapple slices, a nd cherries.
