Mexican hot chocolate

Makes 3-4
Ingredients
4 cups whole milk
1/4 cup sugar
1 teaspoon vanilla
1/4 tsp cinnamon
dash nutmeg (optional)
8 ounces dark chocolate
mini marshmallows for topping
3-4  cinnamon sticks for garnish (optional)

Steps
  1. Break chocolate into pieces.  Set aside.
  2. Heat on medium heat on stove: milk, sugar, vanilla, cinnamon, and nutmeg.  Stir and heat until very hot, but NOT boiling.  Stay with it - you don't want it to boil or scorch. 
  3. Add chocolate pieces to the hot milk mixture.  Lower heat and stir until chocolate is melted.
  4. Remove from heat and whisk until the mixture is a little foamy (2-3 minutes.  If you have a stick blender - use it!
  5. Serve hot (of course) with marshmallows on top and a cinnamon stick for garnish.
