Piña Colada

Just the name conjures up visions of tropical beaches and the sounds of ocean waves! Cocktail legend has it that in 1954, those visions were the result of bartender Ramón Marrero, a bartender in Puerto Rico. The original contained no alcohol! Ramón's cocktail became so famous that Puerto Rico made the Piña Colada the national drink in 1978.
Then, of course, there's the Piña Colada song - "Escape" by Rupert Holmes. Most of us of a certain age can't even say the words "piña colada" without singing the song! Here's a link - have a listen: Link to: Escape by Rupert Holmes

Serves two.
Ingredients
ice
4 ounces light rum
3 ounces cream of coconut or Coco Lopez
3 ounces pineapple juice
juice of one lime
pineapple slice for garnish
Steps

Put a handful of ice into a cocktail shaker or a jar with a lid.
Pour in the rum, cream of coconut, and juices. Shake, shake, shake until it's chilled.
Strain into a chilled glass over ice.
Garnish with a pineapple slice and a cherry and serve.

For a Frozen Version:
Put 3 cups of ice and the rest of the ingredients (except garnishes) into a blender and blend until smooth.
