Alice's Mini Cheesecakes

From my friend Alice Arechiga Wimberly.  Easy and good!
Ingredients
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
2 eggs, slightly beaten
Vanilla Wafer cookies
fruit pie filling (canned) - cherry or blueberry is best
Steps
  1. Mix together cream cheese, eggs, and sugar until well-blended.  
  2. Line cupcake/muffin pans with foil cupcake holders.
  3. Put a Vanilla Wafer in the bottom of each cupcake holder.
  4. Pour cream cheese mixture into holders.
  5. Bake at 350° F for about 20 - 25 minutes.
  6. Top with a spoonful of fruit pie filling.  
  7. Chill before serving.
