Aunt Bessie's Potato Salad

I made this up myself.  Some people put olives, mustard, and green peppers in their potato salad, but I don't like all that, so this is the way I make it.  ~ Bessie Holdaway

Ingredients
4 large russet or Idaho potatoes
1 bunch green onion tops, chopped
mayonnaise to moisten
6 boiled eggs
3 tbsp sweet pickle, chopped
salt & pepper
paprika
Steps
  1. Peel potatoes, cube, and boil uncovered until done.  (DON'T OVERCOOK!)
  2. Drain potatoes and let cool completely.
  3. Mash boiled eggs with fork, mix with green onion, and pickle.  Add to potatoes.
  4. Add mayonnaise until well moistened to your liking.
  5. Add salt and pepper to taste.
  6. Sprinkle top with paprika before serving.
