I made this up myself. Some people put olives, mustard, and green peppers in their potato salad, but I don't like all that, so this is the way I make it. ~ Bessie Holdaway
Ingredients
4 large russet or Idaho potatoes
1 bunch green onion tops, chopped
mayonnaise to moisten
6 boiled eggs
3 tbsp sweet pickle, chopped
salt & pepper
paprika

Steps
- Peel potatoes, cube, and boil uncovered until done. (DON'T OVERCOOK!)
- Drain potatoes and let cool completely.
- Mash boiled eggs with fork, mix with green onion, and pickle. Add to potatoes.
- Add mayonnaise until well moistened to your liking.
- Add salt and pepper to taste.
- Sprinkle top with paprika before serving.
