Easy, Peasy Beer Bread
(Makes one loaf.)

vegan
This is ridiculously easy; it turns out perfectly every time.  No kneading, no rising, no fuss!  Don't worry, alcohol evaporates during baking.

Ingredients
3 cups wheat flour (all-purpose or plain)
1/4 cup brown sugar
1 tsp baking soda
juice of one lemon or 2 tsp of apple cider vinegar
1/2 tsp salt
12 ounces of beer (Don't use light beer or gluten free beer, please.)
Optional:  herbs, sunflower seeds, sesame seeds, flax seeds
Steps
  1. Stir together flour, sugar, baking soda, and salt in a large bowl.  Add any seeds, herbs, etc. at this time.
  2. Pour the beer into a glass or separate bowl and let the foam subside to get your measurement.  Add the lemon juice or vinegar to the beer and give it a stir.  Pour the beer into the flour mixture, not your mouth!
  3. Stir until just blended, then spoon batter into a loaf pan that has been buttered and dusted with flour.
  4. Bake at 375° F for 45 minutes or until an inserted knife comes out clean.
  5. Let sit for about 10 minutes, then run a knife along the edges of loaf pan.
  6. Invert onto a rack to cool.
