Chicken or Turkey Tetrazzini

Aunt Bessie Holdaway and Aunt Anniebelle Bellia (Mama's sisters) were the rebels in the Martin family, what with knowing about exotic dishes like tetrazzini.

Ingredients
3 tsp butter
1 cup chicken broth
3/4 cup half and half
1/2 cup grated cheese
8 oz package spaghetti, cooked
(or other pasta)
2 tbsp almond slivers
1 can sliced mushrooms, drained
3 tbsp flour
2 tbsp sherry or dry white wine
2 cups diced cooked chicken or turkey
1/4 cup Parmesan cheese grated
Steps
  1. Cook spaghetti in boiling water and drain well.
  2. Saute' mushrooms in butter, blend in flour. Add broth, half & half, and cook until it thickens.
  3. Stir in sherry, cheese, and chicken.
  4. Place cooked spaghetti in bottom of casserole pan. Pour the creamed chicken mixture over the spaghetti.
  5. Sprinkle with Parmesan cheese and almonds.
  6. Bake at 375° F for 30 minutes.
