Chocolate Peanut Butter Chip Cookies
Recipe from my niece, Courtney Ricker Dale - Courtney has been baking Christmas cookies since she could reach the counter. I, for one, love this tradition!
Ingredients - Makes about 4 dozen.
1 and 1/4 cup butter, softened
2 eggs
2 cups unsifted all-purpose flour
1 teaspoon baking soda
1 cup chopped nuts (optional)
2 cups sugar
2 cups peanut butter chips
1 teaspoon vanilla
3/4 cup cocoa
1/2 teaspoon salt
1 and 1/4 cup butter, softened

2 cups peanut butter chips
1 teaspoon vanilla
3/4 cup cocoa
1/2 teaspoon salt
Steps
- Cream butter and sugar in large bowl. Add eggs and vanilla; blend well.
- Whisk together: flour, cocoa, baking soda, and salt. Mix slowly into butter mixture. Stir in peanut butter chips and nuts.
- Drop by teaspoonfuls onto un-greased cookie sheet.
- Bake at 350° F for 8 to 9 minutes. (Do not cook too long.) Cool on cookie sheet about 1 minute.
