Coconut curry Lentils

I was over 50 when I learned that I loved curry. This one is delicious - not too spicy!

Ingredients

3 Tablespoons olive oil

1 small to medium onion, chopped fine

2 - 3 cloves garlic, chopped fine

1 Tablespoon minced fresh ginger

1 teaspoon ground cumin

1 teaspoon curry powder or ground turmeric 

1 cup uncooked red lentils or other lentils

1 can crushed tomatoes

juice of 1/2 lemon or lime

1 can coconut m ilk (full fat / unsweetened)

1 & 1/2 cups water

salt to taste

cooked rice for serving

Steps

  1. Sauté onion, garlic, ginger, cumin and curry or turmeric over medium heat in a large saucepan.  Keep stirring so that the spices and onions don't burn.  Cook and stir until the onions are transparent.
  2. Add the uncooked lentils, crushed tomatoes (with liquid), coconut milk, water, and salt.  Stir until mixed, then bring mixture to a boil.
  3. Turn heat to LOW and simmer until lentils are soft, stirring occasionally.  
  4. Serve alone, over hot rice, or hot boiled potatoes!
