Great Discovery  bread

This is an old, old recipe.  I lost it, then put up a search and found it recently!!  Perfectly easy, perfectly no-fail, just perfect!  It's great for first-time bread bakers.  It gets better after it sits for awhile.

Makes 1 loaf
Ingredients
3 cups flour

4 (yes, four) teaspoons baking powder
1 & 1/2 teaspoons salt
1 & 1/4 cups sugar
1 tablespoon salt

1 egg, slightly beaten

 1 & 1/2 cups milk
1 tablespoon olive oil or melted butter

1 tablespoon melted butter for coating top after baking

Steps

  1. Grease loaf pan with butter, then dust with flour.
  2. In a bowl - sift or whisk dry ingredients together - flour, baking powder, salt, and sugar.
  3. In a glass or small bowl, beat the egg.
  4. Stir beaten egg and milk into the dry ingredients.  Stir in the oil.  It will be lumpy, but DON'T over stir
  5. Pour into greased and floured pan.  Let sit for about 20 minutes.
  6. Preheat oven to 350 degrees.
  7. Bake at 350 degrees for 45 - 55 minutes.  It's done when you dip a knife into it and it comes out clean.
  8. While it's hot in the pan, spread the top with a bit of melted butter.
  9. Let cool a bit in the pan, but remove while still warm.
  10. Set on a wire rack to finish cooling.  It's even better the next day!!!!!
