Mama's Red Beans & Rice

Daddy liked red beans better cooked fast, uncovered.   It's tradition in the areas near the Gulf of Mexico, to eat red beans and rice on wash day (Monday).  We had them every Monday!
  1. Wash dried red beans and discard any bad ones.  Place in a large pot of cold water over heat and bring to a boil.
  2. Turn off heat and let set for 20 minutes.
  3. Add a ham bone or ham hock and 2 tbsp bacon grease.
  4. May be cooked slowly, covered, or to make a thicker liquid, cook uncovered on higher heat.
  5. Stir occasionally and add more water as needed.
  6. Must be watched or they will scorch.
  7. Salt and pepper to taste about 10 minutes before serving.
  8. Serve with hot, cooked rice.
