Pam's Picante Salsa

gluten free / vegan
The only spicy sauce (salsa) you'll ever need.  It's so easy and so much better than store-bought.  You can make up a big batch and freeze.

If you like your sals extra spicy, add other hot peppers.  You can also leave the pepper seeds in for a real kick!
Ingredients - Makes about 3 cups.
2 tablespoons olive oil
8 Roma tomatoes, chopped
4 jalapeño peppers, seeded and chopped (or you can use any other spicy peppers that you prefer)
1 red bell pepper, chopped
1 onion, chopped
3 cloves garlic
1/3 cup fresh cilantro, chopped (optional)
pinch of salt
1/2 small lime - juice and zest
1 small lemon - juice and zest
salt and pepper to taste
Steps
  1. Heat olive oil in a pot.  Chop onions and peppers and sauté in the olive oil until just tender and a bit transparent.  ​
  2. Add chopped garlic and stir for about a minute.
  3. Add chopped tomatoes, lime juice and zest, lemon juice and zest, salt, and pepper.
  4. Lower heat to medium low and let simmer for about 10 minutes, stirring every once in awhile.
  5. If you like it chunky, leave it as is.  If you like it a bit more smooth, let it cool a bit, then put it in the blender or use a stick blender to blend just a little. 
  6. Cool and refrigerate or freeze.  Lasts in the fridge for about 10 days,  Freezes well - use within about 2 months.
