The only spicy sauce (salsa) you'll ever need. It's so easy and so much better than store-bought. You can make up a big batch and freeze.
If you like your sals extra spicy, add other hot peppers. You can also leave the pepper seeds in for a real kick!
Ingredients - Makes about 3 cups.
2 tablespoons olive oil
8 Roma tomatoes, chopped
4 jalapeño peppers, seeded and chopped (or you can use any other spicy peppers that you prefer)
1 red bell pepper, chopped
1 onion, chopped
3 cloves garlic
1/3 cup fresh cilantro, chopped (optional)
pinch of salt
1/2 small lime - juice and zest
1 small lemon - juice and zest
salt and pepper to taste

Steps
- Heat olive oil in a pot. Chop onions and peppers and sauté in the olive oil until just tender and a bit transparent.
- Add chopped garlic and stir for about a minute.
- Add chopped tomatoes, lime juice and zest, lemon juice and zest, salt, and pepper.
- Lower heat to medium low and let simmer for about 10 minutes, stirring every once in awhile.
- If you like it chunky, leave it as is. If you like it a bit more smooth, let it cool a bit, then put it in the blender or use a stick blender to blend just a little.
- Cool and refrigerate or freeze. Lasts in the fridge for about 10 days, Freezes well - use within about 2 months.
