Summer roll salad
This is so easy and refreshing. It's great with a cup of soup.
Ingredients for Salad Dressing
3/4 cup rice wine vinegar
1/3 cup brown or white sugar
2 garlic cloves, minced
juice of one lime
1/2 tsp red pepper flakes
1/4 tsp salt

- Put all in a blender or food processor and blend together.
- Taste and adjust for sweetness or saltiness.
Ingredients - Makes 2 large bowls or 4 small.
1 package rice noodles
1/4 cup cilantro, chopped fine
1/4 cup fresh basil, chopped fine
1 Serrano pepper
1/2 cup chopped peanuts
2 avocados, sliced thin
2 carrots, grated or sliced thin
1 red or orange bell pepper, sliced thin
1 cucumber, thin slices
2 cups boiled shrimp or cooked chicken
sesame seeds or sunflower seeds for garnish

1/4 cup fresh basil, chopped fine

2 cups boiled shrimp or cooked chicken

Steps
- Soak rice noodles in cool water for 15 minutes. Drain and cook in boiling water for about 2 minutes, drain again.
- Chop, slice, etc. all vegetables.
- In a large bowl stir all together - noodles, vegetables, shrimp or chicken, and sauce.
- Garnish with lime wedges.
