Apple Crock Pot Pork Tenderloin

The photo shows the tenderloin without the apples, but they are a great addition, especially for fall.

Ingredients
3 to 4 pound pork tenderloin
2 granny smith apples, sliced (optional) (no need to peel)
2 cloves garlic, sliced into about 4 pieces each (lengthwise)
1/3 cup butter
2 tablespoons olive oil
salt and pepper
1/2 teaspoon cinnamon
1/4 cup honey
thyme or  fresh rosemary
Steps
  1. Make 1 and 1/2 inch deep cuts in the top of the tenderloin.   Stuff the apple and garlic slices into the cuts.
  2. If you have apple slices left over, just throw them in the bottom of the slow cooker.
  3. In bottom of cooker, place butter (cut into chunks) and olive oil.  Place the tenderloin on top of this.
  4. Rub the tenderloin with a mixture of salt, pepper, cinnamon, and the thyme.  (If using rosemary, just lay it on top.)
  5. Spoon honey over the top over everything.
  6. I cook on high for 30 minutes, then turn to low for 5 and 1/2 hours - best to leave lid closed. 
  7. When finished, place pork on a cutting board and let rest for 5 - 10 minutes.  Serve with rice, potatoes, etc.
  8. If you wish, you can test the temp of the pork with a meat thermometer to ensure doneness.
