Apricot and Coconut Macaroons

My German mother-in-law, Irene, mailed us boxes of homemade German cookies each Christmas for years.  They are wonderful; you can't stop eating them!  Gluten-free too. 
Ingredients
3 egg whites
1/3 cup granulated sugar, sifted
1 tsp vanilla
1 tsp lemon juice
1 & 1/2 cups coconut flakes
3/4 cup dried apricots, chopped fine
1 tbsp crystallized ginger (or 1/2 tsp ground ginger)
1 cup hazelnuts, ground
1/3 cup packed brown sugar

Steps
  1. Beat egg whites with sifted sugar.
  2. Add vanilla and lemon juice.
  3. Beat until the mixture forms high peaks.
  4. Fold in the rest of the ingredients.
  5. Form into small balls, place on greased cookie sheet.
  6. Let sit at room temperature for about an hour.
  7. Bake at 300° F until done.
