Apricot and Coconut Macaroons

My German mother-in-law, Irene, mailed us boxes of homemade German cookies each Christmas for years. They are wonderful; you can't stop eating them! Gluten-free too.
Ingredients
3 egg whites
1/3 cup granulated sugar, sifted
1 tsp vanilla
1 tsp lemon juice
1 & 1/2 cups coconut flakes
3/4 cup dried apricots, chopped fine
1 tbsp crystallized ginger (or 1/2 tsp ground ginger)
1 cup hazelnuts, ground
1/3 cup packed brown sugar

1 tsp lemon juice
1 & 1/2 cups coconut flakes
3/4 cup dried apricots, chopped fine
1 tbsp crystallized ginger (or 1/2 tsp ground ginger)
1 cup hazelnuts, ground
1/3 cup packed brown sugar
Steps
- Beat egg whites with sifted sugar.
- Add vanilla and lemon juice.
- Beat until the mixture forms high peaks.
- Fold in the rest of the ingredients.
- Form into small balls, place on greased cookie sheet.
- Let sit at room temperature for about an hour.
- Bake at 300° F until done.
