Baked Custard

There's nothing quite so soothing as an old-fashioned custard.

Ingredients - (Makes 4 individual)
2 cups milk
3 eggs, slightly beaten
1/4 cup sugar
1/4 tsp salt
2 tsp vanilla
ground nutmeg (optional)
Steps
  1. Pour milk into a saucepan or double boiler and slightly scald.  Don't let it burn!
  2. Beat eggs in a bowl; stir in sugar, salt and vanilla.
  3. Add a little of the hot milk to the egg mixture and stir to warm without cooking the eggs.
  4. Slowly add the rest of the milk, stirring.
  5. Pour custard into 4 bake-safe cups and place in a roasting pan with about an inch or two of water in the bottom.
  6. Bake at 325° F for 30 to 40 minutes or until a knife inserted comes out clean.
  7. Serve warm or cold with a dash of ground nutmeg sprinkled on top.  To be really decadent - add some whipped cream!
