Bernice's Butter Cake
​(Irish Tea Cake)

Aunt Bernice and her cakes - they were her specialty!  This is an old, old, recipe of hers.  She said that she often made it for her  Eastern Star sisters.  It's very much an Irish tea cake!

Ingredients
1 cup sugar 
1 cup butter (2 sticks), melted
3 eggs, room temperature         
3 teaspoons vanilla extract
2 cups cake flour    OR substitute
1 teaspoon salt
2 teaspoons baking powder
2/3 cup sour cream or (Greek yogurt - This is my modern spin on it)
2 -3 tablespoons extra sugar - to sprinkle on top (You can also sprinkle confectioner's sugar on top.)

Steps
  1. Preheat oven to 350° F.  Prepare a 9x9” baking dish by greasing with butter and lightly dusting with a bit of flour. I like to use a Pyrex glass one. 
  2. Melt the butter on the stovetop (don’t burn) or in the microwave.
  3. Mix the melted butter and sugar in a large bowl until well mixed and a bit fluffy.
  4. One at a time, beat in the eggs, then add vanilla.
  5. Sift together in a separate bowl, flour, salt, baking powder.
  6. A little at at time, add the flour mix to the butter mixture.  Don’t over mix.
  7. Gently stir in the sour cream or Greek yogurt and spoon batter into the baking dish.  Now, sprinkle the extra sugar lightly on top.
  8. Bake at 350° F in preheated oven for 30 minutes or until done.  I like to dip a knife or toothpick into the middle.  If it comes out clean - it’s done.
