Aunt Bernice and her cakes - they were her specialty! This is an old, old, recipe of hers. She said that she often made it for her Eastern Star sisters. It's very much an Irish tea cake!
1 cup sugar
1 cup butter (2 sticks), melted 3 eggs, room temperature 3 teaspoons vanilla extract 2 cups cake flour OR substitute 1 teaspoon salt 2 teaspoons baking powder 2/3 cup sour cream or (Greek yogurt - This is my modern spin on it) 2 -3 tablespoons extra sugar - to sprinkle on top (You can also sprinkle confectioner's sugar on top.) |
