Bessie's Impossible Pumpkin pie

This was Aunt Bessie's recipe.  Since it's made with Bisquick Mix, it's an "Impossible Pie," very popular in the 1980's.  It makes its own crust!

Ingredients
2 & 1/4 cups sugar
2 tbsp butter
2 eggs
2 & 1/2 tsp pumpkin pie spice

1/2 cup Bisquick Mix
1 can (13 oz.) evaporated milk
1 can (16 oz.) pumpkin
2 tsp vanilla
Steps
  1. Heat oven to 350° F.
  2. Grease 9" pie pan.
  3. Beat all ingredients until smooth.  Pour into plate.
  4. Bake until knife inserted in center comes out clean, about 50 - 55 minutes.
