Bessie's Impossible Pumpkin Pie

This was Aunt Bessie's recipe.  Since it's made with Bisquick Mix, it's an "Impossible Pie," very popular in the 1980's.  It makes its own crust!

2 & 1/4 cups sugar
2 tbsp butter
2 eggs
2 & 1/2 tsp pumpkin pie spice
1/2 cup Bisquick Mix
1 can (13 oz.) evaporated milk
1 can (16 oz.) pumpkin
2 tsp vanilla
  1. Heat oven to 350 degrees.
  2. Grease 9" pie pan.
  3. Beat all ingredients until smooth.  Pour into plate.
  4. Bake until knife inserted in center comes out clean, abut 50 - 55 minutes
