Broccoli Cream Soup
3 tbsp unsalted butter
1 & 1/2 tbsp olive oil 1 small to medium head of broccoli, chopped with florets and stems 1 onion, chopped 2 carrots, sliced 3 tbsp flour 3 to 4 cups of chicken broth (or water, for a vegetarian version) 1/2 cup half & half or heavy cream salt and pepper to taste
