Candied Citrus Peel

Ingredients & Steps
oranges, limes, lemons, or grapefruit peel
sugar
  1. Cut fruit in quarters, peel, and cut peel into strips.  Keep a little bit of the white part (pith). 
  2. Boil in a saucepan of water - for at least 30 minutes, making sure it doesn't boil over.
  3. Add 1 tablespoon of sugar for every orange or lemon.  Bring back to a boil, stirring until syrupy and thickened.
  4. Lift fruit strips out of the water with tongs.  (Careful!  That hot syrup will burn!)  Roll peel in sugar.  Place on wax paper or parchment paper and let dry and cool.
