Cast Iron Skillet Pizza

Dough:
1 cup self-rising flour
1/2 teaspoon salt
dash black pepper
1 tablespoon chopped fresh rosemary or basil
1/2 teaspoon dried oregano
4 tablespoons olive oil
4 tablespoons water


Sauce:
1 1/2 cups your favorite tomato sauce from jar
1 onion, chopped small
1 or 2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon chopped fresh basil
salt & pepper


Toppings:
mozzarella cheese, shredded
sliced, pitted black olives
sliced mushrooms
sauteed red bell peppers
capers
For Dough:
  1. Sift flour into a bowl with salt, pepper, and herbs.  Pour in 2 tablespoons of olive oil and 4 tablespoons water.
  2. Mix together until soft.  Add a little more water, if necessary.
  3. On a floured surface, knead the dough and shape it into a round that will fit into the bottom of your cast iron skillet.  (Use about a 9 or 10 inch diameter skillet.)  DON'T PUT THE DOUGH IN THE SKILLET YET!
  4. Heat 1 tablespoon olive oil in skillet.   Put dough into it and cook over low heat for about 5 minutes or until lightly browned on bottom.
  5. Remove dough from pan and add 1 more tablespoon of oil into pan.  Put dough back in and cook on other side for 5 minutes, as well.
For  Sauce:
  1. Saute onions and garlic in olive oil with salt and pepper to season.  Stir in tomato sauce and basil.  Simmer for about 5 minutes.
To Finish Pizza with Toppings:
  1. Spread tomato sauce over pizza dough in skillet.  Sprinkle on desired toppings, then cover with mozzarella cheese.
  2. Transfer skillet to preheated oven (on broil).  Watch carefully and remove as soon as cheese is bubbly.
