Cauliflower  Salad

gluten free
A lower carb version of potato salad - try it!

Ingredients
1 head of cauliflower
5 or 6 boiled eggs 

1/3 cup mayonnaise
2 tbs of mustard
3 tbs of pickle relish or chopped fine pickles

1/8 cup of chopped green onion (uncooked) 
salt/pepper to taste
paprika
Steps
  1. Chop cauliflower into bite-sized pieces and steam or boil in a little salted water until tender.  Drain well and let cool to room temperature.
  2. Cool and peel boil eggs.  Chop or mash.
  3. Mix all the ingredients in a large bowl.  Add more mayonnaise, if necessary.  
  4. Sprinkle top with paprika (if desired).
  5. Chill several hours before serving.
