Cheese - milk's leap towards immortality - Clifton Fadiman
Ingredients
3 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1 tsp salt
2/3 cup sharp Cheddar cheese (shredded)
1/4 stick butter
Steps
  1. Sift together the flour and salt.
  2. Add milk and water and mix well.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Fold in the shredded cheese.
  5. Put a dab of butter into each cup of a muffin tin.  Put in hot oven and let butter melt.
  6. Remove muffin tin and fill about 2/3 full with batter.
  7. Bake at 375° F  for 45 minutes or until all puffy. (Try not to open the door until they're just about finished cooking. Opening the door wilt make them "un-puffy.")
  8. Serve with apricot preserves or orange marmalade.
