Cheesy Popovers

Bread, Biscuits, and Rolls

Ingredients
3 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1 tsp salt
2/3 cup sharp Cheddar cheese (shredded)
1/4 stick butter

Steps
  1. Sift together the flour and salt.
  2. Add milk and water and mix well.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Fold in the shredded cheese.
  5. Put a dab of butter into each cup of a muffin tin.  Put in hot oven and let butter melt.
  6. Remove muffin tin and fill about 2/3 full with batter.
  7. Bake at 375 degrees for 45 minutes or until all puffy. (Try not to open the door until they're just about finished cooking. Opening the door wilt make them "un-puffy.")
  8. Serve with apricot preserves or orange marmalade.
