Chicken Salad

To make it super easy, use pre-cooked chicken fajita meat (thawed, of course) OR cooked rotisserie chicken.  To make a bit different, add 1/2 to 1 tsp curry powder!! 
Ingredients
​2 cups cooked, cubed chicken (deboned white and dark meat)
salt and pepper to taste
1/2 lemon, juiced
1/4 cup mayonnaise
1/4 cup plain yogurt
1 teaspoon Dijon mustard,
2 stalks chopped celery
1/2 cup chopped walnuts
1/2 cup halved green grapes
1/2 cup chopped apples (I usually peel, but you don't have to.)

Steps
  1. In a medium-sized to large bowl, whisk together:  lemon juice, salt, pepper, mayo, yogurt, mustard.
  2. Carefully fold in: chicken, grapes, celery, apples, and walnuts.
  3. Taste to see if more salt and pepper are needed.  Also, if it's too dry, just add more mayo or yogurt!
  4. Serve over lettuce, as a sandwich, or just by itself!!
