Chocolate Pots de Creme

All you need is love.  But a little chocolate now and then doesn't hurt.  - Charles M. Schulz  - My friend, Genie Glade, gave me this recipe.  It's so easy and good. Contains alcohol - but most burns off in the cooking.

Ingredients
1/4 cup sugar 

dash salt 
2 large eggs 
1 & 1/4 cups milk 
9 oz semisweet chocolate, finely chopped
2 tsp vanilla extract
2 tablespoons dark rum or brandy (can leave out)
Orange Marmalade
Steps
  1. In a small saucepan or bowl, stir with whisk:  sugar, salt, and eggs.
  2. Gradually whisk in milk. 
  3. Set the bowl or saucepan over a pot of simmering water.  Stir continuously for 8 minutes or so, until thickened.
  4. Remove bowl from heat; add chocolate, vanilla, and rum, stirring until chocolate melts and mixture is smooth.
  5. Divide chocolate mixture into 10 (4-ounce) bowls or small glasses. 
  6. Cover and chill for 6 to 8 hours or overnight. 
  7. Garnish with marmalade or whipped cream.
