Christmas Eve Apple Pie

Back in the 1980's there was a very cold, cold Christmas in Pascagoula, Mississippi.  My niece, Courtney, and I made this pie on Christmas Eve in Mama's kitchen, getting in the way, but also managing to fill up everyone on this treat.  I can still remember the warmth of the kitchen and the smell of cinnamon and apples!

Mama's Kitchen - @ 1988 - Mama, Pat, and Bessie

Ingredients
1 egg white
1 stick butter (softened)
top & bottom pie crusts, unbaked
​​4 to 5 large apples (peeled and chopped into small pieces)
1 cup sugar
1 tsp cinnamon
(Optional:  1/2 cup chopped pecans and/or raisins)
Steps
  1. Put bottom pie crust in pie pan.
  2. Cream softened butter and sugar.
  3. Spread 1/2 of the butter mixture over the bottom pie crust.
  4. Beat egg white until stiff and add to the reserved butter and sugar mixture.
  5. Pour apples into the pie shell.  (If you are adding nuts and raisins, mix with apples before putting into pie shell.)
  6. Spread egg white mixture over the top of the apples.
  7. Make a lattice-work crust for the top of the pie.
  8. Bake at 325° F for 1 hour or until golden brown.
