Coco Loco Cookies

Ingredients
10 tbsp room temperature butter

1 tbsp coconut oil
1/2 cup sugar
3 eggs
1 tsp vanilla
1 cup shredded unsweetened coconut
1/2 cup coconut flour 
1/4 cup gluten free all purpose flour
Steps
  1. Place butter, coconut oil and sugar in a mixing bowl.  Beat until the butter is light and fluffy.  
  2. Add eggs one at a time, mixing after each addition.  Add vanilla extract.  
  3. Add in coconut, coconut flour, and all-purpose flour. Mix until just combined.
  4. Scoop out balls about the size of a large walnut.  Place on baking sheet and chill for 10 -15 minutes.
  5. Remove cookies from refrigerator and bake at 375° F for about 20 minutes until starting to brown around the edges.
