Crispy Pork Chops

Ingredients
​1 to 2 tablespoons olive oil
thick bone-in pork rib chops  (Get the ones that are at least 1 & 1/2 inch thick.)
salt and pepper
1/4 tsp paprika

2 to 3 cloves garlic, chopped fine
1 tablespoon butter
salt and pepper
  1. Sprinkle salt, pepper, and paprika over each pork chop.
  2. Heat olive oil in skillet or heavy bottom Dutch oven.  
  3. Place pork chops in heated oil and cook a minute or so on each side, until golden.  Repeat flipping the pork chops over every minute or so.  You want them to be a dark golden brown.  This will take about 10 minutes.  Check for doneness with a meat thermometer for 135 degrees F or juices run clear.
  4. Turn off heat and remove pork chops to a plate.  Don't pour out the juices.
  5. Add the garlic and butter to the pan juices until butter is melted.  Put pork chops back into the pan, flip once after 15 seconds, then remove to a clean plate.  Pour pan juices over the chops and serve!​
