Easy No-Knead Bread

This is as simple as can be!  There's no kneading necessary and you only need a large bowl, a small bowl, and a cookie sheet.

Makes 1  loaf -  Use a cookie sheet or baking pan.  No loaf pan needed.

Ingredients

3 cups flour

2 teaspoons yeast

1 cup oats

1/4 - 1/2 cup of seeds and/or nuts (optional)

2 teaspoons salt

2 Tablespoons honey

1 and 1/2 cups very warm water

Steps

  1. Whisk together flour and yeast in a large bowl. 
  2. Add oats, salt, seeds, and nuts and stir all together.
  3. In a small bowl or large measuring cup, stir together the honey and warm water, then slowly pour it over the flour mixture and stir together.  It may seem dry, but it’s OK.  Don’t add more water.
  4. Leave in a ball in the bowl for 3 hours, covered with plastic wrap or a towel. (If you want, you can let the dough sit in the refrigerator for up to 12 hours, before putting it on a pan. It’s not necessary, but it is good this way.  If you do this, let it come to room temperature before baking)
  5. Put buttter and a little flour on a cookie sheet / baking pan.
  6. Put the dough on the pan in a ball and let it rest for 45 more minutes.
  7. Bake in a preheated oven at 425 degrees for 40 minutes.  Check it and if it needs to cook more, lower heat to 190 degrees and cook for about 10 more minutes. 
  8. Let it cool for at least 30 minutes before cutting.
