Fettuccine Primavera

I made a version of Fettuccine Primavera for my first date with my husband!  He ate it, even though I learned later that he didn't care for squash!

Ingredients - Serves 4
1 (16 oz.) package fettuccine noodles
1 cup chopped carrots
1 cup chopped zucchini
1 cup chopped yellow squash
1 dash nutmeg
1 cup of cream, sour cream, or plain yogurt
1/4 teaspoon oregano
salt and pepper to taste
2 tbsp butter
1 tbsp flour
Tips:  You can also add broccoli, red bell peppers, and cherry tomatoes for a colorful feast!
Steps
  1. Cook noodles according to package directions. Drain well and set aside.
  2. Cook vegetables in a little boiling water or saute' until just tender. Drain well.
  3. Heat cream and butter in saucepan until just warm; mixing in flour and stirring frequently until well-blended.
  4. Put all ingredients in a large bowl and toss to coat.
