I made a version of this for my first date with my husband! He ate it, even though I learned later that he didn't care for squash!
1 (16 oz.) package fettuccine noodles
1 cup chopped carrots 1 cup chopped zucchini 1 cup chopped yellow squash 1 dash nutmeg 1 cup of cream, sour cream, or plain yogurt
1/4 teaspoon oregano salt and pepper to taste 2 tbsp butter 1 tbsp flour
Tips: You can also add broccoli, red bell peppers, and cherry tomatoes for a colorful feast! |
