First Lady Jill and President Joe Biden
First Lady -  2021 - 2025
Quotes from Jill -
  • "The responsibility for educating a young person is not the student’s responsibility alone, nor is it the job of the teacher alone, nor is it the obligation of the parents alone. It is a responsibility that belongs to all of us. Because we all reap the benefits when our citizens are well educated."
  • "Education doesn't just make us smarter. It makes us whole.”
Factoids -
  • Jill was the first First Lady to continue her full time career.  She was a college professor.
  • Jill Biden has written a memoir and two children's books.
Bio -
  • Jill Jacobs was born in New Jersey and grew up in Pennsylvania.  She graduated from the University of Delaware with a degree in English. The same year in Delaware, she met Senator Joseph Biden on a blind date.  They married two years later and she became mother to Joe’s two sons, while also having a daughter with Joe.
  • Jill’s entire career has centered on teaching.  She taught high school and community college and in addition to her Bachelor's degree, Jill gained a Master’s degree in Education, a Master's in English, and a Doctorate of Education.  As First Lady, Jill continued teaching.
  • Joe became Vice-President to President Obama.  He did not run for President until 2021, when he won against Donald Trump.  As First Lady, Jill supported military and veterans families and survivors through assistance with education and health care.   In 2023, Jill headed up an initiative on Women’s Health Research to improve disparities.
  • The Bidens established the Biden Foundation and launched the Biden Cancer Initiative.

About Joe - Joe Biden assumed office during the COVID-19 pandemic, prioritizing vaccine distribution and economic recovery. His administration passed the American Rescue Plan, a bipartisan infrastructure law, and pursued ambitious climate and social policies. Biden has faced challenges including inflation, international conflicts like the war in Ukraine, and border security. His presidency emphasized unity and restored traditional norms.

These cookies are Jill's favorites, adapted from “Night with Giada:  A Quick and Simple Recipe to Improve Dinner” by Giada De Laurentiis.
Ingredients
1 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 stick butter, softened to room temp
1/2 cup light brown sugar
1/2 cup sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla
2 cups old fashioned oats
1 cup raisins or dried cranberries
1/2 cup chopped pecans (optional)
1 (4-ounce) bittersweet chocolate bar, chopped in chunks

It's helpful to have an ice cream scoop!
Steps
  1. Preheat the oven to 350 degrees.  Prepare two cookie sheets by greasing or lining with parchment paper.  Set aside.
  2. In a bowl, stir together flour, cinnamon, baking powder, baking soda, and salt.
  3. In a mixing bowl, beat together butter and white and brown sugar until light and fluffy.
  4. Add egg and vanilla and beat until smooth. Gradually beat in flour mixture.
  5. Add oats, raisins or cranberries, and chocolate chunks.  Mix or stir just until combined - it will be stiff - don't over mix.
  6. Using an ice cream scoop or clean hands, scoop slightly rounded mounds of the dough into 12 (2-inch-diameter) balls.  Arrange 6 balls of dough, spaced evenly apart, on each baking sheet. Using the back of a spoon, a spatula, or the bottom of a glass and flatten the tops a bit.
  7. Bake at 350 degrees until the cookies are golden at edges, about 13 to 15 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before serving.
