German Potato Salad

Ingredients
(Serves 4 - 6)
6 medium potatoes
2 stalks celery, chopped
1 tsp salt
2 tbsp butter
2 tbsp flour
1/2 tsp dry mustard (or 1 tbsp mustard)
1 tbsp sugar
1 cup beer
1/2 tbsp Tabasco Sauce
2 tbsp fresh parsley, chopped
Steps
  1. Boil the potatoes until just tender.  Drain, peel, slice, and set aside in a bowl.
  2. In a saucepan, melt butter and mix in flour, stirring until blended.
  3. Add mustard and sugar; stir.
  4. Slowly add the beer and Tabasco sauce.  Bring the mixture to a boil, stirring constantly.
  5. Pour the butter mixture over the potatoes; add celery.
  6. Sprinkle with parsley.  Toss lightly and let stand one hour before serving.
