Ginger Lime Shrimp

You can serve this over rice or on warm flour tortillas with some red cabbage.

Ingredients

2 tbsp peanut oil

1 tsp sesame oil

1 tbsp fresh ginger, minced

1/2 cup fresh cilantro, chopped fine

1/4 cup orange juice

2 shallots, chopped

1 clove garlic, minced

1 lime, juiced

1 tsp Pick-A-Peppa Sauce or other hot sauce (optional)

1/2 tsp Tabasco Sauce

salt & pepper to taste

1 lb shrimp, peeled & deveined

Steps

  1. Put everything except the shrimp in a small saucepan and heat it up a little.
  2. Put the shrimp into a 9x13-inch pyrex baking dish.  Pour the heated sauce over the shrimp and bake for 20 minutes at 350° F.  Stir once during the cooking.
  3. Serve over rice or drain liquid and serve with a flour tortilla as a taco!

Pick-A-Peppa is a very special thick sauce that's spicy.  It's Jamaican in origin and has been around since 1921.   I could just drink it! 

The ingredients are unique:  cane vinegar, onions, sugar, tomato paste, salt, peppers, raisins, ginger, mango, cloves, thyme, garlic, and orange peel.
