Ginger Syrup for Soda

no alcohol / gluten free / vegan

Ingredients - Makes about 1 and 1/2 cups
2 ounces fresh peeled ginger (2 one-inch long pieces)
  • To peel the ginger root, place in plastic bag and freeze.  Remove from freezer and run under warm water.  The peel nearly slides right off.)
1 cup water
1/2 cup sugar
2 teaspoons lemon zest
Steps
  1. Peel ginger and grate it very fine.  Save any pulp that is left over.
  2. Over medium heat, boil water and sugar in a pan.
  3. Add grated ginger and lemon zest; stir quickly and remove from stove.  Cover and let sit for about an hour.
  4. Strain the mixture through a fine-strainer.
  5. Cool and stir 2 - 3 tablespoons per glass of sparkling soda to make a refreshing ginger-ale type drink.
Note:  You can store it in the fridge for a couple of weeks
