Ginger Syrup for Soda
no alcohol / gluten free / vegan
Ingredients - Makes about 1 and 1/2 cups
2 ounces fresh peeled ginger (2 one-inch long pieces)
1/2 cup sugar
2 teaspoons lemon zest

- To peel the ginger root, place in plastic bag and freeze. Remove from freezer and run under warm water. The peel nearly slides right off.)

- Peel ginger and grate it very fine. Save any pulp that is left over.
- Over medium heat, boil water and sugar in a pan.
- Add grated ginger and lemon zest; stir quickly and remove from stove. Cover and let sit for about an hour.
- Strain the mixture through a fine-strainer.
- Cool and stir 2 - 3 tablespoons per glass of sparkling soda to make a refreshing ginger-ale type drink.
