Gingerbread
If you love ginger - this is for you.
Ingredients
1 egg
1/2 cup sugar
1/2 cup melted unsalted butter
2 & 1/2 cups all-purpose flour
1 & 1/2 teaspoons baking soda
1 & 1/2 teaspoons ground ginger (if using fresh grated - put 1 tbsp.)
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup molasses
1/2 cup honey
1 cup boiling water
whipped cream for topping, if desired

Steps
- Beat egg, gradually adding sugar and butter.
- In separate bowl, sift together flour and rest of dry ingredients.
- Stir molasses and honey into the boiling water, until dissolved and smooth. Slightly cool.
- Stir the molasses mixture into the egg and sugar mixture. Add dry ingredients and stir together well.
- Pour batter into greased 9 in. x 9 in. pan.
- Bake in pre-heated 350° F oven for 50-55 minutes.
- Cool completely before cutting.
