Gingerbread
If you love ginger - this is for you.
Cakes
1 egg
1/2 cup sugar
1/2 cup melted unsalted butter
2 & 1/2 cups all-purpose flour
1 & 1/2 teaspoons baking soda
1 & 1/2 teaspoons ground ginger (if using fresh grated - put 1 tbsp.)
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup molasses
1/2 cup honey
1 cup boiling water
Beat egg, gradually adding sugar and butter.
In separate bowl, sift together flour and rest of dry ingredients.
Stir molasses and honey into the boiling water, until dissolved and smooth. Slightly cool.
Stir the molasses mixture into the egg and sugar mixture. Add dry ingredients and stir together well.
Pour batter into greased 9 in. x 9 in. pan.
Bake in pre-heated 350 degree oven for 50-55 minutes.
Cool completely before cutting.
