Hollandaise Sauce

Instructions
3 egg yolks
1/4 cup water
2 tbsp lemon juice
1/2 cup cold butter; cut into small pieces
1/8 tsp paprika
1/8 tsp cayenne pepper
Steps
  1. In a small saucepan, heat egg yolks, water, and lemon juice. 
  2. Cook over very low heat, stirring constantly, until yolk mixture begins to bubble at edges.
  3. Whisk in butter, 1 piece at a time, until melted and sauce is thickened. 
  4. Stir in seasonings and salt and pepper to taste. Remove from heat.
