Kat Pickett's Sweet Potato Casserole
As a college student, I had this several times at the Ben and Kathleen Pickett's. It's become a favorite of our family now. Daddy loved this when I made it for him!
Ingredients - Serves 6
6 cups mashed, cooked, sweet potatoes
1 cup milk
2/3 cup white sugar
1 teaspoon salt
2/3 stick butter, melted
2 teaspoons vanilla extract
1 cup milk

4 eggs, slightly beaten

Topping Ingredients:
2/3 cup flour
2/3 cup brown sugar
2/3 cup butter
2 cups chopped pecans
2/3 cup flour
2/3 cup brown sugar
2/3 cup butter
2 cups chopped pecans
Steps
- Stir together sweet potatoes, milk, 2/3 stick melted butter, white sugar, eggs, salt, and vanilla. Place in greased casserole dish.
- With fingers or fork, stir together the topping ingredients: flour, brown sugar, butter, and pecans. Sprinkle on top of casserole.
- Bake at 350° F for 30 - 35 minutes.
