This is similar to a favorite of mine from Anthony's in Houston! Use gluten-free cookie or graham cracker crumbs for crust to make it a gluten free pie.
Ingredients
1 and 3/4 cups graham cracker crumbs (make or use boxed)
(Use gluten free cookie or cracker crumbs, if you wish.)
1/2 cup light brown sugar, packed firmly
1/4 cup plus 1 tablespoon butter, melted
3 (14-ounce) cans sweetened condensed milk
5 egg yolks
2 cups fresh lime juice (Use key limes, if you can get them)
Optional: whipped cream for topping

- Stir together, crumbs, sugar, and melted butter in bowl. Press into the bottom and sides of a deep dish pie pan or 13x9x2-inch baking dish.
- In mixing bowl at low speed, mix together milk, egg yolks, and lime juice for 2 to 3 minutes until blended and a bit thick.
- Pour into pie crust and bake in preheated 350° F oven for about 20 minutes or until pressing the surface lightly with your finger leaves a mark.
- When done, refrigerate for at least 6 hours before serving.
- Serve with a dollop of whipped cream or garnish of lime.
