King Ranch Chicken Casserole
There are many versions of this Texas dish. This one is from Jane Ricker. Many of us have requested this for our birthday dinners!
Ingredients - Serves 6 - 8
1 large chicken or 6 chicken breasts, (stewed and deboned)
12-15 corn tortillas, torn into strips
1 cup chopped onion
2 cups shredded sharp cheddar cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup chicken broth
1 can Rotel tomatoes (drained)
1 large chicken or 6 chicken breasts, (stewed and deboned)
12-15 corn tortillas, torn into strips
1 cup chopped onion
2 cups shredded sharp cheddar cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup chicken broth
1 can Rotel tomatoes (drained)
Steps
- Make sauce by blending well: mushroom and chicken soup, chicken broth, and tomatoes.
- Tear of chop chicken into large bite-sized pieces.
- Place 1/2 of chicken in greased deep casserole dish for bottom layer.
- Add 1/2 of torn tortillas, 1/2 cheese, 1/2 sauce, and 1/2 onions.
- Repeat layers, ending with cheese on top.
- Bake 45 minutes in preheated 350° F oven.
