Lemon Chicken

Ingredients
​1/4 cup olive oil
6 cloves garlic, minced
1/3 cup white wine or beer!
juice of 1 lemon
zest of 2 lemons
1 sliced lemon

​salt & pepper to taste
1 tsp dried oregano
1 tsp thyme or sage
4 boneless chicken breasts (with skin)
Steps
  1. In a small saucepan, warm olive oil on low heat, add minced garlic, but don't let it brown.
  2. Add wine or beer, lemon juice & zest, and seasonings.  Stir and remove from heat.
  3. Pour olive oil mixture into a 9 x 12 inch baking pan.
  4. Put chicken breasts on top of oil mixture with skin up.  Spoon a little of the oil mixture over the chicken and sprinkle with a little more salt and pepper.
  5. Slice one of the lemons into wedges and place them on the sides of the chicken.
  6. Bake at 400°F for 30 - 40 minutes.  Check after 30 minutes; they should be done.
  7. If chicken needs more browning, broil for about 2 minutes.
