Lime Cilantro Pesto

Ingredients - 3/4 cup
4 bunches of fresh cilantro
1 large or 2 small limes, juiced
2 tsp ginger, minced
1 tsp cumin
2 tbsp olive oil
1/4 cup picante sauce / Mexican salsa
salt & pepper to taste
Steps
  1. Cut off bottom stems of cilantro and toss out.
  2. Place all ingredients in a blender or food processor and mix until smooth.
  3. Refrigerate if you are going to use it soon.  If not, freeze it in ice cube trays, then transfer to zip lock bags and keep for us in the freezer.
  4. Spread on bread, add to pasta, or add to tomato sauce.
