Margarita on the Rocks

I don't think I ever had a Margarita until I moved to Texas!  I do love them - in small amounts.  There's nothing to compare when you're eating Mexican or Tex-Mex food.  I like the virgin ones (without alcohol) just as much.  Cocktail legend has it that Pancho Morales, a bartender in Juarez, Mexico, was the creator of the Margarita in the 1940's.

Serves one.
Ingredients
Kosher salt
1 lime
ice 
​2 oz. tequila
1 oz. lime juice
1/2 oz. Gran Marnier or Triple Sec
1/2 oz. beer (optional)​
Steps
  1. Pour a shot of tequila (I like Jose' Cuervo Gold) about 2 oz. into an ice-filled cocktail mixer or tall glass.
  2. Add about 1 oz of lime juice.  Please measure!
  3. 1/2 oz of Gran Marnier or other orange-flavored liqueur
  4. 1/2 shot (dash) beer (Yes, beer.  This is optional, but if you have an open one on hand, it makes the margarita frothy!)
  5. Cover mixer and give it 9 or 10 shakes.
  6. If you want the rim salted, go ahead and do that now by rubbing the rim of your glass with lime, then swirling it into Kosher salt on a saucer.
  7. Pour into a glass and garnish with lime slice or wedge.​

Kosher or coarse sea salt to coat glass rim
1 lime
​ice
1 ounce (2tablespoons) lime juice
1 ounce (2 tablespoons) orange juice
1 ounce (2 tablespoons) lemon juice
1 to 2 teaspoons simple syrup  (See Recipe Link - Simple Syrup)
1/3 cup sparkling water
extra lime slice , for garnish
Steps
  1. Put coarse sea salt or Kosher salt in a saucer.  Rubbing the rim of your glass with lime, then swirling it into Kosher salt on a saucer.  Fill glass with ice.
  2. Pour the juices, simple syrup, and ice into a cocktail shaker or jar and shake for 15 seconds.  Stir in sparkling water and strain into prepared glass.  Garnish with lime slice or wedge.​
