Mexican Telera Rolls

Bread, Biscuits, and Rolls
Great rolls for sandwiches!

Ingredients - Makes 10 - 12 rolls.
4 cups bread flour  - ONLY use bread flour
2 & 1/4 teaspoons active dry yeast
2 teaspoons salt
2 teaspoons sugar
2 tablespoons coconut oil or butter melted
1 & 1/2 cups water
Steps
  1. Line cookie sheets with parchment paper.
  2. Stir together flour and yeast in a mixing bowl. 
  3. Stir in melted butter or coconut oil and sugar. 
  4. Stir in half of the water; continue stirring until a dough starts to form.  Then gradually add the rest of the water to make a dough that's a bit sticky.
  5. Put dough on a floured surface and knead for 10-15 minutes.  You can use your stand mixer with a dough attachment to do this in about 5  minutes.
  6. Shape dough in a ball and put it in a well-oiled bowl.  Cover and place in a warm spot to rise about an hour until it doubles in size.  
  7. With your fist, knock the dough down and then divide in about 10 -12 equal pieces.  
  8. With clean hands, shape pieces into flat ovals on a floured surface and lightly dust each with flour.
  9. Take the handle end of a wooden spoon and make 2 indentations on each roll, so there are 3 sections on the top.  (Don't cut through the dough!!   
  10. Put the rolls on the prepared cookie sheets and cover.  Let rise again for about 30 minutes.  
  11. Bake in a preheated 400-degree oven for 20 minutes until golden brown.  Cool on wire racks completely before using.
